Breakfast is always a struggle…can I get an amen? You need something you can prepare and eat almost mindlessly. It needs to be a habit. So I wanted to share this little life saver of a breakfast hack with you. Baked Oatmeal. My mom would make this recipe and it was like a breakfast cake…with oatmeal. Sounds yummy right? But then she put herself through my Healthy 56 program and modified the recipe. I like to say she H56’d it. And it became a game changer at my house. My kids ask for it on a daily basis and it provides a low sugar, whole grain and good source of protein to keep you and them fueled until lunch.
But the best part? Is it is soo easy to make that my kids can help me mix it up while I make dinner and it can bake while we are eating. It will be all ready for the morning! This recipe makes a 9×13 pan and will last the week with my 3 kids. However if you don’t plan on eating it everyday cut it in pieces and wrap it in wax paper. Throw it in a ziplock and freeze the single serving pieces. Pull a piece out and microwave it and serve with milk or fresh fruit. Breakfast was never so easy and delicious.
Baked Oatmeal
4 cups Old Fashioned Oats
1/4 cup dark brown sugar
1 T baking powder
2 tsp cinnamon
Mix all the dry ingredients
Add:
2/3 cup canola oil
2 eggs
1 1/2 cups milk
Stir together by hand. Add anything additional at this point. My kids love some Craisins. You could also add chopped nuts or flax seed.
Spray a 9×13 baking pan with cooking spray. Spread the oatmeal in a pan and bake for 350 for 25 mins.
